Why This Recipe Matters for Your Heart:

You know, we often think about exercise and staying active when it comes to heart health, but what we put on our plates is just as important. This recipe is packed with ingredients that are known to support cardiovascular health:

  • Salmon: A superstar source of omega-3 fatty acids, which can help lower triglycerides, reduce blood pressure, and decrease the risk of blood clots.

  • Roasted Vegetables: A colorful mix of sweet potatoes, bell peppers, onions, and broccoli provides essential vitamins, minerals, and fiber, which helps lower cholesterol and regulate blood sugar.

  • Olive Oil: A heart-healthy fat that can help improve cholesterol levels.

  • Lemon, Oregano, and Thyme: These add flavor without the need for excessive salt, which is crucial for maintaining healthy blood pressure.

The Recipe: Heart-Healthy Baked Salmon with Roasted Vegetables

Ingredients:

  • 2 salmon fillets (about 6 ounces each)

  • 1 sweet potato, diced

  • 1 bell pepper (any color), diced

  • 1 red onion, sliced

  • 1 cup broccoli florets

  • 2 tablespoons olive oil

  • 1 lemon, sliced

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare the Vegetables: In a large bowl, toss the sweet potato, bell pepper, red onion, and broccoli with 1 tablespoon of olive oil, oregano, thyme, salt, and pepper.

  3. Bake the Vegetables: Spread the vegetables in a single layer on a baking sheet. Bake for 20 minutes, or until tender-crisp.

  4. Prepare the Salmon: While the vegetables are baking, pat the salmon fillets dry with paper towels. Drizzle with the remaining olive oil, and season with salt and pepper. Place the salmon fillets on top of the vegetables.

  5. Add Lemon: Place lemon slices on top of the salmon.

  6. Bake the Salmon: Bake for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

  7. Serve: Serve the baked salmon with the roasted vegetables.

Tips and Variations:

  • Feel free to use other vegetables like asparagus, carrots, or zucchini.

  • Add a sprinkle of fresh herbs like dill or parsley for extra flavor.

  • If you don't have fresh lemon, a squeeze of lemon juice will do.

  • To check if salmon is done, use a fork to test if it flakes easily.

  • Buy your salmon fresh, and if buying frozen, make sure to thaw it completely.
